Absinthe is a distilled, highly alcoholic spirit derived from herbs and the fundamental ingredient is grand wormwood (Artemisia absinthium). It is the only absinthe authenticated by Marie-Claude Delahaye, founder and curator of the Absinthe Museum.

Absinthe was popular during the 19th and early 20th centuries, especially in France, particularly among impressionist artists and writers such as Van Gogh, Lautrec and Baudelaire. But Absinthe was banned at the peak of its popularity because it was considered to be too strong alcohol. The ban was lifted in the late 1990's and it was reintroduced to the American market around 2008.

The process that gives green absinthe its colour is traditionally the result of the maceration of herbs in the spirit - imparting chlorophyll from the herbs to achieve the desired depth of colour. Absinthe turns to a cloudy, opalescent milky green/yellow (know as the louche) when mixed with water and is historically referred to as La Fée Verte.

Absinthe has a very powerful wormwood profile. The are notes of other herbs and botanicals in the palate. It has a dominating anise finish, and leaves a strong, lingering dry anise on the tongue.
